Low-Carb Instant Pot Recipe: Curry Chicken
There is nothing more satisfying than creating an instant pot recipe unless that meal tastes great and is low in carbs to help you with your diet goals. Find even more recipes HERE!
You will notice that my recipe includes onions and peppers (a great way to use them up before they go bad), but the picture does not show any. This is because the night I made this I wasn’t aware my husband had used up my veggies in the omelettes he made us in that days breakfast so this dish you see was minus those veggies so I added some steamed broccoli to the plate.

Ingredients
- 2 lbs boneless chicken breast
- 2 tbsp curry powder
- 1 short jar of black bean salsa (about 2 cups)
- sliced onion
- sliced bell pepper
- 1/4 cup chicken stock
- 1 can coconut milk
- Riced cauliflower
Instructions
- Place chicken and onions, peppers in the pot. Pour the salsa and stock over the chicken and veggies. Add the curry powder. Cover and set pressure to high for 13 minutes. Release pressure and remove chicken to slice. Add the coconut milk to the juices in the cooker and stir 1-2 minutes. Add the chicken back in while you prepare the sides. Serve over riced cauliflower
